COOKERY COURSES

l’Abbaye du Palais is a former Cistercian Abbey in the Limousin (France) close to Limoges. Today the complex is used as a small scale hotel (chambre d’hôte) and is run by a Dutch couple. In the old abbey kitchen the food is usually prepared in classic style with respect for traditional cooking and often locally grown products (produits du terroir) are used.

6-day cookery clinics: four times a year we organize a 6-day cookery clinic. Each course starts on Wednesday. Departure is on Sunday. A minimum of 6 participants is required to start the clinic. The maximum is 10. Click here for the program. Groups of at least 6 may select their own date.

A lot of attention will be paid to product knowledge, basic preparation of sauces, filleting, boning and tying up of fish, poultry and meat, timing, working method and adding taste to the food. Numerous 'tips & tricks' will be passed on about coagulating, thickening, beating up, burning, etc. 

Accommodation: You will cook and stay at a former 12th century abbey, situated on a 5,5 ha domain. The rooms are decorated with French antique furniture and have a bathroom with antique bath on legs, separate shower, toilet and wash basin.

Bar with chess table and darts, adjacent billiards room and library. Bocce ball court, bicycle rent and walks that start from the domain. Golf courses and tennis courts are found in the immediate surroundings.

The price is EUR 575,00 p.p. based on a double room. The supplement for a single room is EUR 112,50. Room mates that do not cook, but join us at dinner time pay EUR 475,00 (excursions excluded).
