The
kitchen is Martijn’s domain. The recurring theme in experiencing food
at l’Abbaye du Palais is a result of
the combination of Martijn being a gourmand, having had a hotel
management education and of
20 years of experience with one of the best party-caterers in the
Netherlands. In the old abbey kitchen the food is usually prepared in
classic style with respect for traditional cooking. Often products grown
in the region (produits du terroir) are used.

In
the evening you are welcome to join us at the table
d’ hôtes. On
a daily basis, with the exception of Wednesday, we serve a “menu
du jour’ usually consisting of three courses. On special occasions we
prepare a deluxe 5 or 6-course ‘menu de dégustation’ accompanied by
classified wines. During the summer there is an extensive barbecue with
biological sucking-pig roasted on the spit.

Breakfast |
|
For
the hotel guests breakfast is served in the Petit Salon between 08:30
and 10:30. On request and after consultation it is possible to deviate
from these times. Breakfast is included in the room rate. The guests
staying in the gîtes can leave their order of fresh bread for the next
day with Saskia or Martijn in the kitchen
and pick it up the next morning from 08:30 onwards.

| Well-stocked
picnic baskets, for two persons or more, can be ordered a day in advance
(before 12:00). The next morning, after 09:00 o’clock, they can be
picked up in the kitchen .

| cookery courses |
| Four
times a year we organize a 6-day cookery
course. A lot of attention will be paid to buying the food: e.g.
visit fresh food markets, cattle breeders and fish farms. A wine tasting
event is also included. Each course starts on Wednesday. Departure is on
Sunday. There is a requirement of at least 6 participants for the clinic
to start and a maximum of 10. |
